  • 3 cups cooked day-old rice
  • 2 tablespoons vegetable oil (or sesame oil)
  • 1 cup mixed fresh or frozen vegetables (carrots, peas, bell peppers)
  • 2 large eggs
  • 3 tablespoons low-sodium soy sauce
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Whisk eggs in a bowl with a pinch of salt. Lightly oil the air fryer basket and cook the eggs for about 3 minutes until set. Chop into small pieces.
  3. Add garlic and ginger to the basket with a dash of oil; sauté for 1-2 minutes until fragrant.
  4. Toss in the cooked rice and soy sauce, stirring to coat evenly.
