- 1 cup diced apples (Granny Smith or Honeycrisp)
- 1 tsp vanilla extract
- 8 oz cream cheese (for frosting)

Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, cream softened butter until smooth. Gradually add sugar until light and fluffy. Beat in eggs one at a time followed by vanilla extract.
- Alternate adding dry ingredients and milk to the wet mixture until just combined. Fold in diced apples gently.
- Fill cupcake liners evenly with batter and bake for 18–20 minutes or until a toothpick inserted comes out clean.
- Allow cupcakes to cool completely before frosting with cream cheese frosting and drizzling caramel on top if desired.
