Description

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter (softened)
  • 2 large eggs (room temperature)
  • ½ cup whole milk
  • 1 cup diced apples (Granny Smith or Honeycrisp)
  • 1 tsp vanilla extract
  • 8 oz cream cheese (for frosting)
  • Optional: caramel sauce for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, cream softened butter until smooth. Gradually add sugar until light and fluffy. Beat in eggs one at a time followed by vanilla extract.
  4. Alternate adding dry ingredients and milk to the wet mixture until just combined. Fold in diced apples gently.
  5. Fill cupcake liners evenly with batter and bake for 18–20 minutes or until a toothpick inserted comes out clean.
  6. Allow cupcakes to cool completely before frosting with cream cheese frosting and drizzling caramel on top if desired.
