Description

Autumn Naan Pizzas are a delightful autumn treat featuring warm naan topped with roasted seasonal vegetables, creamy feta, and a tangy balsamic glaze. This easy-to-make dish is perfect for cozy gatherings or a quick weeknight dinner, bringing comfort and flavor to your table.


Ingredients

  • 2 pieces of naan bread
  • 1 cup mixed seasonal vegetables (bell peppers, zucchini, red onions)
  • 1/2 cup crumbled feta cheese
  • 2 tbsp balsamic glaze
  • 2 tbsp extra virgin olive oil
  • 1 tsp fresh herbs (basil or thyme), chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Chop the mixed vegetables into bite-sized pieces and toss with olive oil, salt, pepper, and herbs.
  3. Spread the seasoned veggies on a baking sheet lined with parchment paper and roast for about 20 minutes until tender.
  4. On another baking sheet, place the naan bread. Top each with roasted vegetables and crumbled feta.
  5. Bake for an additional 10 minutes until crispy and cheese is melted.
  6. Drizzle with balsamic glaze and top with fresh herbs before slicing.
