  • 6 slices thick-cut bacon
  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups Russet potatoes, diced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup chopped pickles

Instructions

  1. In a large pot, fry bacon over medium heat until crispy. Transfer to paper towels, leaving about 2 tablespoons of fat in the pot.
  2. Add ground beef and cook until browned; drain excess fat if necessary.
  3. Stir in onion and garlic; sauté until translucent.
  4. Add potatoes and chicken broth; bring to a boil then simmer for about 20 minutes until potatoes are tender.
  5. Stir in heavy cream and cheddar cheese until melted.
  6. Mix in chopped pickles just before serving.
