Ingredients

  • 4 cups kale leaves, torn
  • 1 cup quinoa, rinsed
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse and dry the kale leaves thoroughly, then tear them into bite-sized pieces.
  3. In a large bowl, drizzle olive oil over the kale and massage it until well coated.
  4. Add garlic powder, salt, pepper, and uncooked quinoa; mix well.
  5. Spread the mixture on a parchment-lined baking sheet and bake for 15-20 minutes until crispy.
