  • 8 slices brioche or challah bread
  • 1 cup pureed pumpkin (canned)
  • 4 large eggs
  • 2 cups whole milk (or almond/oat milk)
  • 1/2 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cut bread into thick slices and arrange in the dish.
  3. In a bowl, whisk together pumpkin, eggs, milk, maple syrup, cinnamon, nutmeg, and salt until smooth.
  4. Pour mixture over bread slices, pressing gently to soak. Cover and refrigerate overnight.
  5. Remove from fridge 30 minutes prior to baking. Bake for 45-50 minutes or until golden brown and set.
