  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 1 cup sour cream
  • 3 ripe bananas, mashed
  • 3.4 oz instant vanilla pudding mix
  • 1 cup milk
  • 1 cup whipped topping

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl; press into the bottom of a springform pan.
  2. Beat cream cheese and sugar until smooth; mix in vanilla extract.
  3. Gently fold in sour cream and mashed bananas until well blended.
  4. Whisk together pudding mix and milk; fold into the cheesecake mixture.
  5. Pour filling over crust and bake for 55-60 minutes, until edges are set but center jiggles slightly. Cool completely before refrigerating.
  6. Spread whipped topping over chilled cheesecake and garnish with sliced bananas or graham cracker crumbs if desired.
