- 8 oz spaghetti or linguine
- 1 cup whole milk ricotta cheese
- 2 large organic lemons (juiced and zested)
- 3 cloves garlic (minced)
- ½ cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- ¼ cup fresh basil or parsley (chopped)
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water and cook spaghetti or linguine according to package instructions until al dente, about 8-10 minutes.
- While pasta cooks, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Lower the heat and stir in ricotta cheese, lemon juice, and zest until smooth and creamy.
- Before draining pasta, reserve some pasta water, then add drained pasta into the skillet with the ricotta mixture. Toss to combine, adding reserved pasta water as needed for creaminess.
- Remove from heat, stir in Parmesan cheese and fresh herbs, then season with salt and pepper to taste. Serve immediately.
