Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 cups black cherries, pitted (fresh or frozen)
  • 2 tsp vanilla extract
  • 3 large eggs (room temperature)

Instructions

  1. Preheat your oven to 325°F (163°C) and grease an 8×8-inch baking pan.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar until well mixed. Press the mixture into the bottom of the prepared pan.
  3. In another bowl, beat the cream cheese until smooth. Gradually add the remaining sugar, then mix in sour cream and vanilla extract.
  4. Add eggs one at a time, mixing on low speed until just incorporated to maintain fluffiness.
  5. Gently fold in black cherries using a spatula.
  6. Pour the cheesecake mixture over the crust and bake for 40-45 minutes until slightly jiggly in the center. Cool completely before refrigerating for at least two hours before slicing.
