  • 2 cups broccoli stems, peeled and spiralized (about 200g)
  • 1 cup carrots, julienned (about 120g)
  • 2 tbsp toasted sesame oil
  • 1 tbsp fresh ginger, grated
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp lemon juice

Instructions

  1. Peel the broccoli stems and spiralize them into noodle-like strips. Julienne the carrots.
  2. In a bowl, whisk together sesame oil, grated ginger, soy sauce, honey (or maple syrup), and lemon juice until smooth.
  3. Heat olive oil in a pan over medium heat. Sauté the broccoli stem noodles and carrot sticks for about 3-5 minutes until tender but still crisp.
  4. Pour the dressing over the cooked noodles and toss to coat evenly.
  5. Adjust seasoning to taste if necessary, then serve garnished with sesame seeds and sliced green onions.
