  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 8 oz fresh burrata cheese
  • 4 tbsp extra virgin olive oil
  • ¼ cup fresh basil leaves, chopped
  • ¼ cup fresh parsley leaves, chopped
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prepare your workstation by setting up three bowls: one for flour, one for beaten eggs, and one for panko breadcrumbs mixed with salt and pepper.
  2. Coat each chicken breast in flour, dip it in the egg mixture, then roll it in breadcrumbs until fully coated.
  3. Heat olive oil in a large skillet over medium heat until shimmering.
  4. Add the coated chicken breasts to the skillet, cooking for about 5-7 minutes on each side until golden brown and cooked through.
  5. Remove the chicken from the skillet and place it on paper towels to drain excess oil. Top each piece generously with burrata cheese.
