Ingredients

  • 1 cup dried pinto beans (soaked overnight)
  • 4 strips bacon (chopped)
  • 1 medium yellow onion (chopped)
  • 3 garlic cloves (minced)
  • 1 can (14 oz) diced tomatoes (with juice)
  • 2 fresh jalapeños (chopped)
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Fresh cilantro (for garnish)

Instructions

  1. Soak the pinto beans overnight in plenty of water.
  2. In a large pot over medium heat, cook the bacon until crispy. Remove and set aside, leaving grease in the pot.
  3. Sauté chopped onions in the bacon grease until translucent, then add minced garlic and cook for an additional minute.
  4. Stir in drained pinto beans, diced tomatoes (with juice), chopped jalapeños, lime juice, salt, pepper, and crumbled bacon.
  5. Cover with water (about two inches above) and bring to a boil. Reduce heat and simmer for approximately one hour or until beans are tender.
  6. Adjust seasoning as needed before serving hot, garnished with fresh cilantro.
