  • 1 cup long grain white rice
  • 1 medium onion, diced
  • 1 cup bell peppers, chopped
  • 1 can (15 oz) diced tomatoes, undrained
  • 2 cups shredded cheddar cheese
  • 2 cups beef broth
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef with diced onion until fully cooked; drain excess fat.
  3. Add chopped bell peppers and cook until slightly softened.
  4. Stir in canned tomatoes (with juice), uncooked rice, beef broth, garlic powder, Italian seasoning, salt, and pepper; mix well.
  5. Transfer half of the mixture into a baking dish and layer with half of the cheese; repeat layers.
  6. Cover with foil and bake for 45 minutes; remove foil during the last 10 minutes to brown the cheese.
