  • 1 cup chopped bell peppers (mixed colors)
  • 1 medium onion, diced
  • 1 cup sliced mushrooms
  • 8 oz cream cheese, softened
  • 2 cups shredded provolone or mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 large eggs, beaten

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with nonstick spray.
  2. In a large skillet over medium heat, sauté onion, bell peppers, and mushrooms until softened.
  3. Push the veggies aside and add the ground beef, cooking until browned.
  4. Stir in the cream cheese until melted and combined with the meat and vegetables.
  5. Season with garlic powder, Italian seasoning, salt, and pepper. Mix well.
  6. In a bowl, combine the meat mixture with beaten eggs and transfer to the prepared baking dish.
