- 1 lb sirloin steak, sliced into strips
- 1 cup long-grain rice
- 1 ½ cups shredded cheddar and Monterey Jack cheese
- 1 cup bell peppers, chopped (mixed colors)
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add onions and bell peppers; sauté until softened.
- Add sliced steak to the skillet, seasoning with salt and pepper. Sauté for 5-7 minutes until browned.
- Stir in minced garlic; cook for about 30 seconds. Then add long-grain rice; mix well.
- Pour in beef broth while scraping the pan’s bottom for flavor. Bring to a gentle boil.
- Reduce heat to low, cover, and simmer for about 15 minutes or until rice is tender and liquid is absorbed.
- Remove from heat, sprinkle cheese on top, cover until melted (about 3 minutes).
