Ingredients

  • 1 lb sirloin steak, sliced into strips
  • 1 cup long-grain rice
  • 1 ½ cups shredded cheddar and Monterey Jack cheese
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and bell peppers; sauté until softened.
  2. Add sliced steak to the skillet, seasoning with salt and pepper. Sauté for 5-7 minutes until browned.
  3. Stir in minced garlic; cook for about 30 seconds. Then add long-grain rice; mix well.
  4. Pour in beef broth while scraping the pan’s bottom for flavor. Bring to a gentle boil.
  5. Reduce heat to low, cover, and simmer for about 15 minutes or until rice is tender and liquid is absorbed.
  6. Remove from heat, sprinkle cheese on top, cover until melted (about 3 minutes).
