Description

Chicken Bacon Broccoli Pasta Salad is a vibrant and satisfying dish that brings together tender chicken, crispy bacon, fresh broccoli, and rotini pasta in a creamy dressing.   • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 6 strips crispy bacon
  • 1 head fresh broccoli florets (about 2 cups)
  • 8 oz rotini pasta
  • 1 cup sour cream
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper; bake for 25-30 minutes until cooked through. Shred once cooled.
  2. Cook rotini in salted boiling water according to package instructions (8-10 minutes). Drain and rinse under cold water.
  3. Blanch broccoli florets in the same pot for 2-3 minutes until bright green; then plunge into cold water.
  4. Cook bacon in a skillet over medium heat until crispy (5-7 minutes); chop into bite-sized pieces.
  5. In a large bowl, combine shredded chicken, pasta, broccoli, and bacon. In another bowl, whisk together sour cream, mayonnaise, Dijon mustard, salt, and pepper. Pour over salad ingredients and toss to coat evenly.
  6. Serve chilled or at room temperature.
