- 1 cup plain Greek yogurt
- 4 cloves fresh garlic, minced
- Juice of 1 lemon
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 2 cups cooked quinoa or rice
- 1 cup chopped cucumber
- 1 cup halved cherry tomatoes
- ½ cup thinly sliced red onion
- ½ cup pitted Kalamata olives
- ½ cup crumbled feta cheese
Instructions
- Marinate the chicken by mixing Greek yogurt, garlic, lemon juice, olive oil, salt, and pepper in a bowl. Coat chicken breasts and refrigerate for at least 30 minutes.
- Preheat your grill or skillet over medium-high heat.
- Cook marinated chicken for about 6-7 minutes per side until browned and cooked through (165°F/75°C internal temperature). Rest before slicing.
- Meanwhile, cook quinoa or rice according to package instructions.
- In bowls, layer quinoa/rice followed by sliced chicken, cucumber, tomatoes, onion, olives, and feta. Drizzle with olive oil or tzatziki if desired.
