Description

Chicken Gyro Bowls are a delightful fusion of flavors, featuring juicy grilled chicken served on a bed of fluffy quinoa or rice, topped with vibrant veggies and creamy feta. This dish is not only a feast for the senses but also an easy, customizable meal perfect for any occasion.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 4 cloves fresh garlic, minced
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 cups cooked quinoa or rice
  • 1 cup chopped cucumber
  • 1 cup halved cherry tomatoes
  • ½ cup thinly sliced red onion
  • ½ cup pitted Kalamata olives
  • ½ cup crumbled feta cheese

Instructions

  1. Marinate the chicken by mixing Greek yogurt, garlic, lemon juice, olive oil, salt, and pepper in a bowl. Coat chicken breasts and refrigerate for at least 30 minutes.
  2. Preheat your grill or skillet over medium-high heat.
  3. Cook marinated chicken for about 6-7 minutes per side until browned and cooked through (165°F/75°C internal temperature). Rest before slicing.
  4. Meanwhile, cook quinoa or rice according to package instructions.
  5. In bowls, layer quinoa/rice followed by sliced chicken, cucumber, tomatoes, onion, olives, and feta. Drizzle with olive oil or tzatziki if desired.
