  • 4 boneless, skinless chicken breasts
  • 1/2 cup unsalted butter, softened
  • 1/4 cup fresh parsley, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp lemon zest
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pound each chicken breast to about half an inch thick for even cooking.
  3. In a bowl, mix softened butter with garlic, parsley, lemon zest, salt, and pepper until creamy.
  4. Place a tablespoon of herb butter on each chicken breast. Fold sides and roll tightly; secure with toothpicks if needed.
  5. Set up three bowls: one for seasoned flour, one for beaten eggs, and one for panko breadcrumbs mixed with salt.
  6. Dip each stuffed chicken first in flour, then egg, and finally coat with breadcrumbs.
  7. Heat oil in a skillet over medium heat; fry each piece until golden brown (about 5 minutes per side).
  8. Transfer to a baking dish and bake for 15-20 minutes until the internal temperature reaches 165°F (74°C).
