- 1/2 cup unsalted butter, softened
- 1/4 cup fresh parsley, finely chopped
- 3 garlic cloves, minced
- 1 tsp lemon zest
- 1 cup panko breadcrumbs
- 2 large eggs, beaten
- 1/2 cup all-purpose flour
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Pound each chicken breast to about half an inch thick for even cooking.
- In a bowl, mix softened butter with garlic, parsley, lemon zest, salt, and pepper until creamy.
- Place a tablespoon of herb butter on each chicken breast. Fold sides and roll tightly; secure with toothpicks if needed.
- Set up three bowls: one for seasoned flour, one for beaten eggs, and one for panko breadcrumbs mixed with salt.
- Dip each stuffed chicken first in flour, then egg, and finally coat with breadcrumbs.
- Heat oil in a skillet over medium heat; fry each piece until golden brown (about 5 minutes per side).
- Transfer to a baking dish and bake for 15-20 minutes until the internal temperature reaches 165°F (74°C).
- Allow to rest before serving.
