  • 4 boneless, skinless chicken breasts
  • 1 cup flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 cup marinara sauce (store-bought or homemade)
  • 1 cup grated Parmesan cheese
  • 2 tsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper.
  3. Set up a breading station: Place flour in one bowl, beaten eggs in another, and mix panko breadcrumbs with half the Parmesan in a third bowl.
  4. Dredge each chicken breast in flour, dip into the egg wash, then coat with the panko mixture.
  5. Heat olive oil in a skillet over medium heat. Cook breaded chicken until golden brown on both sides (about 4-5 minutes each side).
  6. Transfer chicken to the baking dish. Pour marinara sauce over the top and sprinkle remaining Parmesan cheese.
  7. Bake for about 20 minutes or until cooked through and cheese is bubbly.
