Description

Ingredients

  • 2 cups fresh cilantro leaves (packed)
  • 2 garlic cloves
  • 1/4 cup pine nuts (toasted)
  • 1/4 cup Parmesan cheese (freshly grated)
  • 1/2 cup extra virgin olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • Salt and pepper to taste

Instructions

  1. Toast the pine nuts in a dry skillet over medium heat until golden brown and fragrant.
  2. In a food processor, combine cilantro, garlic, toasted pine nuts, and Parmesan cheese. Pulse until finely chopped.
  3. With the processor running, slowly drizzle in olive oil and add lemon juice until smooth. Season with salt and pepper to taste.
