  • 4 large eggs (room temperature)
  • 1 cup full-fat coconut milk
  • 1/2 cup unsalted butter (melted)
  • 1 tsp pure vanilla extract
  • 1 cup unsweetened shredded coconut
  • 1 cup heavy cream (for frosting)
  • 2 cups powdered sugar (for frosting)
  • Optional: 1/2 cup toasted coconut flakes (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, whisk together coconut flour, sugar, and baking powder.
  3. In another bowl, beat eggs, coconut milk, melted butter, and vanilla until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until combined; do not overmix.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
  6. While cakes cool, whip heavy cream in a chilled bowl until soft peaks form. Gradually add powdered sugar until stiff peaks form.
  7. Frost the cooled cakes with whipped cream and top with toasted coconut flakes if desired.
