  • 1 cup bell peppers (assorted colors), diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tsp taco seasoning (store-bought or homemade)
  • 1 cup tortilla chips, crushed
  • 1 avocado, diced

Instructions

  1. Prep your ingredients by chopping bell peppers, cherry tomatoes, red onion, and cilantro into bite-sized pieces.
  2. In a large mixing bowl, combine corn, black beans, diced bell peppers, cherry tomatoes, red onion, cilantro, and avocado. Toss gently to mix.
  3. Squeeze lime juice over the mixture and sprinkle taco seasoning to taste. Toss again to ensure even coating.
