Description

Ingredients

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sweet corn, fresh or frozen
  • 1 can (14.5 oz) fire-roasted diced tomatoes, drained
  • 1 small red onion, finely chopped
  • 1 cup bell peppers (red, yellow, or orange), diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes (about 4 tbsp)
  • 2 tbsp extra virgin olive oil
  • 1 jalapeño, finely chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Rinse the black beans and corn under cold water and drain.
  2. Finely chop the red onion, bell peppers, and jalapeño (if using).
  3. In a large bowl, combine the black beans, corn, diced tomatoes, red onion, bell peppers, jalapeño, and cilantro.
  4. Drizzle lime juice and olive oil over the mixture; stir gently to combine.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving for optimal flavor.
