Instructions
- Rinse the black beans and corn under cold water and drain.
- Finely chop the red onion, bell peppers, and jalapeño (if using).
- In a large bowl, combine the black beans, corn, diced tomatoes, red onion, bell peppers, jalapeño, and cilantro.
- Drizzle lime juice and olive oil over the mixture; stir gently to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving for optimal flavor.
