  • 34 boneless, skinless chicken breasts (1 lb)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese (full-fat preferred)
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp low-sodium soy sauce
  • 1 packet dried ranch seasoning mix

Instructions

  1. Gather all ingredients and chop the onion and garlic.
  2. In a large pot over medium heat, add chicken breasts and enough broth to cover them; cook for 20-25 minutes until tender.
  3. Remove chicken from pot and shred it after cooling slightly.
  4. In the same pot, sauté onions and garlic until fragrant (about 3 minutes).
  5. Return shredded chicken to the pot; add cream cheese, cheddar cheese, soy sauce, ranch seasoning, and more broth if needed. Stir until smooth.
  6. Serve hot, garnished with extra cheese or green onions if desired.
