- 1 cup orzo pasta
- 1 can (15 oz) creamed corn
- 2 (5 oz) fresh salmon fillets
- 1 medium shallot, finely chopped
- 2 cloves garlic, minced
- 2 cups low-sodium vegetable broth
- 2 tsp olive oil
- Fresh parsley or basil, for garnish
Instructions
- Preheat the oven to 400°F (200°C). Grease a baking sheet with olive oil and season salmon with salt and pepper.
- Bake the salmon on the prepared sheet for 12-15 minutes until flaky.
- While salmon bakes, bring vegetable broth to a boil in a pot. Add orzo and cook according to package instructions (8-10 minutes).
- In a skillet over medium heat, sauté shallots in olive oil for about 3 minutes. Add garlic and sauté until fragrant.
- Stir in creamed corn and simmer for 5 minutes.
- Drain excess broth from cooked orzo and fold into the corn mixture along with flaked salmon. Mix until combined but chunky.
- Serve warm, garnished with fresh herbs.
