Ingredients

  • 8 oz penne pasta
  • 2 cups chopped romaine lettuce
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp anchovy paste
  • 1 tbsp Dijon mustard
  • ½ cup sour cream
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. In a mixing bowl, combine minced garlic, anchovy paste, Dijon mustard, sour cream, lemon juice, olive oil, salt, and pepper. Whisk until smooth.
  3. In a large bowl, toss chopped romaine with half of the dressing. Add cooked pasta and Parmesan cheese; mix gently until well-coated.
  4. Serve immediately, garnished with extra Parmesan and cracked black pepper.
