  • 4 boneless, skinless chicken breasts (about 680g)
  • 3 cloves fresh garlic, minced
  • 8 oz (225g) fresh button or cremini mushrooms, sliced
  • 1 cup (240ml) heavy cream
  • 2 tbsp low-sodium soy sauce
  • 1 cup (240ml) chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken with salt and pepper. In a large skillet over medium heat, add olive oil and cook the seasoned chicken for 5-7 minutes on each side until golden brown. Remove from the skillet and set aside.
  2. In the same skillet, sauté sliced mushrooms and minced garlic until tender, about 4-5 minutes.
  3. Deglaze the skillet by adding chicken broth and soy sauce, scraping up browned bits. Bring to a simmer and stir in heavy cream; let thicken for about 5 minutes.
  4. Return the chicken to the skillet, spooning sauce over it. Cover and let simmer for another 10 minutes until heated through.
  5. Serve hot over rice or pasta, drizzling extra sauce on top if desired.
