  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 8 oz sliced cremini or button mushrooms
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp Dijon mustard
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for about 6-7 minutes per side until golden brown; transfer to a plate and keep warm.
  2. In the same skillet, add more olive oil if needed. Sauté mushrooms and minced garlic until tender and golden (about 5 minutes).
  3. Pour in chicken broth and soy sauce, scraping up any browned bits from the pan. Bring to a simmer before adding heavy cream and Dijon mustard.
  4. Return cooked chicken to the skillet and simmer for an additional 5 minutes until heated through.
  5. Taste the sauce; adjust seasoning if needed. Serve hot over rice or pasta.
