  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1 tsp garlic powder
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 2 tbsp sriracha (adjust to taste)
  • 2 green onions, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare your workspace.
  2. In one bowl, whisk the eggs with garlic powder. In another bowl, mix flour with salt. In a third bowl, place panko breadcrumbs seasoned with pepper.
  3. Dip each chicken piece into the flour, followed by the egg mixture, and then coat with panko breadcrumbs.
  4. Heat oil in a skillet over medium heat; add breaded chicken and cook until golden brown (about 4-5 minutes per side).
  5. While chicken cooks, mix mayonnaise, sweet chili sauce, and sriracha in a small bowl.
  6. Once cooked through (internal temp should be 165°F), slice chicken and assemble in bowls over rice or noodles. Drizzle with bang bang sauce and garnish with green onions.
