Description

Ingredients

  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water to remove bitterness. Combine with 2 cups water in a saucepan; bring to a boil. Reduce heat and simmer for 15 minutes until fluffy.
  2. While quinoa cooks, chop the cherry tomatoes, cucumber, bell peppers, red onion, and parsley.
  3. In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
  4. Fluff cooked quinoa with a fork in a large bowl. Fold in veggies and dressing until evenly coated.
  5. Allow salad to rest for 10 minutes before serving chilled or at room temperature.
