Description

Crock Pot Birria Tacos are a mouthwatering delight that combine tender, slow-cooked beef with rich spices, all wrapped in warm tortillas. Paired with a flavorful dipping broth, these tacos turn any meal into a festive occasion. Perfect for gatherings or cozy nights in, they offer comfort and unforgettable flavors.

  • 34 lbs chuck roast
  • 4 dried guajillo chiles
  • 2 dried pasilla chiles
  • 1 medium onion, chopped
  • 56 garlic cloves, minced
  • 4 cups low-sodium beef broth
  • 2 tsp cumin powder
  • 1 tsp dried oregano
  • Juice of 1 lime
  • 12 corn tortillas
  • Fresh cilantro and diced onion (for garnish)

Instructions

  1. Remove stems and seeds from guajillo and pasilla chiles. Soak in hot water for 15 minutes until soft.
  2. Blend soaked chiles, onion, garlic, cumin, oregano, lime juice, and a bit of beef broth until smooth.
  3. Place chuck roast in the crock pot and pour the blended sauce over it. Add remaining beef broth around the edges.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. After cooking, shred the beef with two forks until tender.
  6. Warm tortillas on a skillet; fill each with shredded beef and top with chopped onions and cilantro.
