- 3–4 lbs chuck roast
- 4 dried guajillo chiles
- 2 dried pasilla chiles
- 1 medium onion, chopped
- 5–6 garlic cloves, minced
- 4 cups low-sodium beef broth
- 2 tsp cumin powder
- 1 tsp dried oregano
- Juice of 1 lime
- 12 corn tortillas
- Fresh cilantro and diced onion (for garnish)
Instructions
- Remove stems and seeds from guajillo and pasilla chiles. Soak in hot water for 15 minutes until soft.
- Blend soaked chiles, onion, garlic, cumin, oregano, lime juice, and a bit of beef broth until smooth.
- Place chuck roast in the crock pot and pour the blended sauce over it. Add remaining beef broth around the edges.
- Cover and cook on low for 8 hours or high for 4 hours.
- After cooking, shred the beef with two forks until tender.
- Warm tortillas on a skillet; fill each with shredded beef and top with chopped onions and cilantro.
