  • 2 cups elbow macaroni
  • 1 lb lean ground beef
  • 2 cups sharp cheddar cheese, shredded
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 tbsp chili powder
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup sour cream

Instructions

  1. Sauté onions and garlic in a skillet with oil until golden brown.
  2. Add ground beef to the skillet; season with salt and pepper and cook until browned. Drain excess fat.
  3. Transfer the beef mixture to the crockpot. Stir in elbow macaroni, diced tomatoes (with juice), beef broth, chili powder, and any additional spices.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours.
  5. About 30 minutes before serving, stir in shredded cheddar cheese until melted.
