  • 4 cups Yukon Gold potatoes, peeled and diced
  • 6 slices cooked bacon, crumbled
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese

Instructions

  1. Prepare the ingredients by washing and peeling the potatoes. Dice them into bite-sized pieces.
  2. In a skillet over medium heat, cook the bacon until crispy. Remove from heat and crumble.
  3. In the same skillet, sauté diced onions and minced garlic until translucent (about 3 minutes).
  4. Combine potatoes, crumbled bacon, sautéed onions, garlic, and chicken broth in a crockpot. Stir well.
  5. Cover and cook on low for 6-8 hours or on high for 4 hours until potatoes are tender.
  6. About 30 minutes before serving, stir in cream cheese and cheddar until melted. Adjust seasoning with salt and pepper as needed.
