  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup long-grain white rice
  • 3 cloves garlic, minced
  • 2 tbsp fresh lime juice
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 bell peppers, sliced (any color)
  • 2 tbsp olive oil
  • Fresh cilantro (optional)

Instructions

  1. 1. Marinate the Chicken: Slice chicken into bite-sized pieces. Mix lime juice, minced garlic, cumin, and paprika in a bowl. Add chicken and let it marinate while preparing other ingredients.
  2. 2. Cook the Rice: Rinse rice under cold water until clear. In a pot, combine rice with 2 cups water; bring to a boil. Lower heat, cover, and simmer for about 18 minutes until fluffy.
  3. 3. Sauté the Veggies: Heat olive oil in a skillet over medium heat. Add sliced bell peppers and sauté for about 5 minutes until softened.
  4. 4. Cook the Chicken: Push veggies to one side of the skillet; add marinated chicken. Cook for 7-10 minutes until golden brown and cooked through.
  5. 5. Add Black Beans: Mix in drained black beans and stir to warm through.
  6. 6. Assemble Bowls: Serve rice topped with the chicken mixture. Garnish with fresh cilantro or avocado as desired.
