  • 1 cup Medjool dates (chopped)
  • 2 tsp baking powder
  • 3 large eggs
  • ½ cup unsalted butter (melted)
  • ¾ cup brown sugar
  • ½ cup pure date syrup
  • 1 cup heavy cream (for glaze)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Soak chopped dates in hot water for 10 minutes to soften.
  3. In a bowl, mix melted butter and brown sugar until creamy. Add eggs one at a time.
  4. In another bowl, sift together flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
  5. Stir in date syrup and softened dates until evenly mixed.
  6. Pour batter into the pan and bake for 30-35 minutes or until a toothpick comes out clean.
  7. For the caramel glaze, heat heavy cream in a saucepan over low heat; stir in sugar until dissolved, then simmer until thickened (5-7 mins).
  8. Once cooled slightly, invert the cake onto a plate and drizzle warm caramel glaze on top.
