- 3 large eggs
- ½ cup unsalted butter (melted)
- ¾ cup brown sugar
- ½ cup pure date syrup
- 1 cup heavy cream (for glaze)
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Soak chopped dates in hot water for 10 minutes to soften.
- In a bowl, mix melted butter and brown sugar until creamy. Add eggs one at a time.
- In another bowl, sift together flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
- Stir in date syrup and softened dates until evenly mixed.
- Pour batter into the pan and bake for 30-35 minutes or until a toothpick comes out clean.
- For the caramel glaze, heat heavy cream in a saucepan over low heat; stir in sugar until dissolved, then simmer until thickened (5-7 mins).
- Once cooled slightly, invert the cake onto a plate and drizzle warm caramel glaze on top.
