  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 8 oz fresh mushrooms, sliced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream or sour cream
  • 2 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients: chop onion and carrots, and slice mushrooms. Mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Sear chicken until golden brown on both sides (about 6 minutes each). Remove from skillet.
  3. In the same skillet, sauté onions, carrots, and mushrooms until onions become translucent (about 5 minutes). Add minced garlic and cook for another minute.
  4. Pour in chicken broth while scraping the bottom of the skillet to release flavor bits. Return seared chicken to the pan.
  5. Simmer uncovered for about 15 minutes until the chicken is cooked through. Stir in cream or sour cream at the end to thicken sauce.
  6. Serve garnished with fresh parsley.
