- 4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1 medium onion, finely chopped
- 2 medium carrots, diced
- 8 oz fresh mushrooms, sliced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream or sour cream
- 2 tsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped (for garnish)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare your ingredients: chop onion and carrots, and slice mushrooms. Mince the garlic.
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Sear chicken until golden brown on both sides (about 6 minutes each). Remove from skillet.
- In the same skillet, sauté onions, carrots, and mushrooms until onions become translucent (about 5 minutes). Add minced garlic and cook for another minute.
- Pour in chicken broth while scraping the bottom of the skillet to release flavor bits. Return seared chicken to the pan.
- Simmer uncovered for about 15 minutes until the chicken is cooked through. Stir in cream or sour cream at the end to thicken sauce.
- Serve garnished with fresh parsley.
