  • 4 medium bell peppers (red, green, yellow, or orange)
  • 1 lb thinly sliced ribeye or flank steak
  • 1 cup sweet onions (thinly sliced)
  • 1/2 cup green bell pepper (diced)
  • 1/2 cup fresh mushrooms (sliced)
  • 1 cup shredded provolone or cheddar cheese
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds; place upright in a baking dish.
  2. In a skillet over medium heat, add olive oil. Sauté onions and mushrooms until tender.
  3. Add thinly sliced steak to the skillet; cook until browned. Season with garlic powder, salt, and pepper.
  4. Stir in shredded cheese until melted.
  5. Fill each pepper with the steak-and-cheese mixture, pressing down slightly.
  6. Cover with foil and bake for 25 minutes; uncover and bake for an additional 10 minutes until cheese is golden.
