  • 4 boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 1 cup frozen spinach, thawed and well-drained
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 4 oz cream cheese, softened
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese, divided
  • 2 tsp olive oil
  • ½ cup sour cream

Instructions

  1. 1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. 2. Season chicken breasts with salt and pepper. In a skillet over medium-high heat, sear each breast in olive oil for about 5 minutes per side until browned but not cooked through.
  3. 3. In a bowl, mix cream cheese, sour cream, garlic, spinach, artichokes, Parmesan cheese, and half of the mozzarella until smooth.
  4. 4. Place seared chicken in the baking dish and top with the creamy mixture. Sprinkle remaining mozzarella on top.
  5. 5. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C). Let rest before serving.
