  • 4 small cucumbers (about 1 lb)
  • 2 cups filtered water
  • 2 tablespoons non-iodized sea salt
  • 3 garlic cloves, crushed
  • 4 sprigs fresh dill
  • 1 teaspoon black peppercorns
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Prepare the brine: In a saucepan, combine water and sea salt over medium heat until dissolved. Let cool completely.
  2. Pack the jars: Place cucumbers upright in clean glass jars. Add crushed garlic, dill sprigs, black peppercorns, and red pepper flakes between cucumbers.
  3. Add the brine: Pour cooled brine over cucumbers until fully submerged, leaving about an inch of space at the top.
  4. Seal and store: Tightly seal jars and place in a cool dark spot at room temperature for 3-7 days. Check daily for bubbles.
  5. Taste test: After three days, taste your pickles daily until desired tanginess is achieved. Once ready, transfer jars to the refrigerator.
