- 2 lbs Yukon Gold potatoes, diced
- 6 strips bacon, chopped
- 1 cup red onion, diced
- 1/2 cup apple cider vinegar
- 2 tbsp Dijon mustard
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Boil the diced Yukon Gold potatoes in salted water for 10-15 minutes until fork-tender. Drain and let cool slightly.
- In a skillet, cook the chopped bacon over medium heat until crispy. Remove and drain on paper towels.
- In a bowl, whisk together apple cider vinegar, Dijon mustard, olive oil, salt, and pepper to create the dressing.
- In a large mixing bowl, combine warm potatoes, crispy bacon, and diced red onion. Pour the dressing over and toss gently until well coated.
- Serve warm or at room temperature.
