Description

German Potato Salad is a warm, tangy side dish bursting with flavors that will elevate any meal.


Ingredients

  • 2 lbs Yukon Gold potatoes, diced
  • 6 strips bacon, chopped
  • 1 cup red onion, diced
  • 1/2 cup apple cider vinegar
  • 2 tbsp Dijon mustard
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Boil the diced Yukon Gold potatoes in salted water for 10-15 minutes until fork-tender. Drain and let cool slightly.
  2. In a skillet, cook the chopped bacon over medium heat until crispy. Remove and drain on paper towels.
  3. In a bowl, whisk together apple cider vinegar, Dijon mustard, olive oil, salt, and pepper to create the dressing.
  4. In a large mixing bowl, combine warm potatoes, crispy bacon, and diced red onion. Pour the dressing over and toss gently until well coated.
  5. Serve warm or at room temperature.
