  • 2 medium zucchini, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 tsp Italian seasoning
  • 1 cup tomato sauce
  • ½ cup panko breadcrumbs
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with nonstick spray.
  2. In a large skillet over medium heat, add olive oil and sauté the chopped onion until translucent (about 5 minutes).
  3. Add the ground beef to the skillet. Cook until browned and no longer pink (7-10 minutes), seasoning with salt, pepper, and Italian seasoning.
  4. Stir in the sliced zucchini and tomato sauce. Simmer for 5 minutes to blend flavors.
  5. Transfer the mixture to the prepared baking dish. Top with cheddar cheese and panko breadcrumbs.
  6. Bake for 25-30 minutes until golden brown and bubbly.
