Ingredients

  • 1 lb lean ground turkey
  • 1 cup bell peppers (mixed colors), diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp taco seasoning
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup shredded cheddar and Monterey Jack cheese blend
  • Fresh cilantro (optional), for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onions and bell peppers until soft, about 5 minutes.
  2. Push veggies to one side, add ground turkey, and cook until browned, breaking it apart. Stir in minced garlic for the last minute.
  3. Sprinkle taco seasoning over the mixture. Add diced tomatoes, black beans, and corn; mix well and simmer for 5 minutes.
  4. Reduce heat, sprinkle cheese on top, cover with a lid until melted (about 3 minutes).
  5. Garnish with fresh cilantro if desired and serve warm from the skillet.
