- 1 tbsp taco seasoning
- 1 can (14.5 oz) diced tomatoes with juices
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh or frozen)
- 1 cup shredded cheddar and Monterey Jack cheese blend
- Fresh cilantro (optional), for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté chopped onions and bell peppers until soft, about 5 minutes.
- Push veggies to one side, add ground turkey, and cook until browned, breaking it apart. Stir in minced garlic for the last minute.
- Sprinkle taco seasoning over the mixture. Add diced tomatoes, black beans, and corn; mix well and simmer for 5 minutes.
- Reduce heat, sprinkle cheese on top, cover with a lid until melted (about 3 minutes).
- Garnish with fresh cilantro if desired and serve warm from the skillet.
