  • 34 boneless, skinless chicken breasts
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup pineapple chunks (fresh or drained canned)
  • 1 medium red onion, cut into wedges
  • 4 cloves fresh garlic, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 2 tbsp coconut oil
  • Sesame seeds (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix soy sauce, honey, minced garlic, and lime juice to create the marinade.
  3. Place chicken in a zip-top bag or bowl and pour marinade over it. Let it sit for at least 30 minutes.
  4. While the chicken marinates, chop the vegetables and pineapple into bite-sized pieces.
  5. On a large baking sheet, spread the marinated chicken on one side and arrange the chopped veggies and pineapple on the other. Drizzle with coconut oil.
  6. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
