- 1 medium red onion, diced
- 3 cloves garlic, minced
- 1 cup bell peppers (red and yellow), chopped
- 1 medium zucchini, chopped
- 1/2 cup Kalamata olives, sliced
- 1/2 cup feta cheese, crumbled
- 2 tbsp extra virgin olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Prep your ingredients by chopping all veggies into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat. Sauté onions and garlic until fragrant (3-4 minutes).
- Add ground chicken, breaking it apart as it cooks until browned (5-7 minutes).
- Stir in bell peppers and zucchini; cook until slightly crisp (4-5 minutes).
- Season with oregano, thyme, salt, pepper, and lemon juice; cook for another minute.
- Gently fold in Kalamata olives and feta cheese before removing from heat.
- Serve warm or chilled over quinoa or rice.
