  • 1 lb lean ground chicken
  • 1 medium red onion, diced
  • 3 cloves garlic, minced
  • 1 cup bell peppers (red and yellow), chopped
  • 1 medium zucchini, chopped
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping all veggies into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions and garlic until fragrant (3-4 minutes).
  3. Add ground chicken, breaking it apart as it cooks until browned (5-7 minutes).
  4. Stir in bell peppers and zucchini; cook until slightly crisp (4-5 minutes).
  5. Season with oregano, thyme, salt, pepper, and lemon juice; cook for another minute.
  6. Gently fold in Kalamata olives and feta cheese before removing from heat.
  7. Serve warm or chilled over quinoa or rice.
