Description

  • 2 cups old-fashioned rolled oats
  • 2 ripe bananas (mashed)
  • 1/2 cup almond or peanut butter (smooth)
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/2 cup chopped dried fruits (raisins, cranberries) or nuts (walnuts)
  • 1/4 cup flaxseed meal

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a large bowl, combine rolled oats, flaxseed meal, cinnamon, and any chopped dried fruits or nuts.
  3. In another bowl, mash ripe bananas until smooth. Stir in nut butter and maple syrup until well combined.
  4. Pour the wet mixture into the dry ingredients and gently fold together until just combined.
  5. Spread the batter evenly in the prepared baking dish and bake for 25-30 minutes, or until golden brown.
  6. Let cool completely before slicing into squares.
