  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, thinly sliced
  • 1/2 small red onion, finely chopped
  • 1/3 cup sliced almonds (toasted)
  • 1/2 cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse mixed greens under cold water and dry them thoroughly.
  2. Halve cherry tomatoes, slice cucumber into rounds, and finely chop red onion.
  3. Toast sliced almonds in a dry skillet over medium heat for about 3-5 minutes until golden brown.
  4. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper until well combined.
  5. In a large bowl, mix prepared greens, chopped veggies, toasted almonds, and feta cheese. Drizzle with dressing and toss gently until coated.
  6. Serve immediately or chill for 30 minutes to enhance flavors.
