  • 300g boneless chicken thighs
  • 2 large eggs
  • 2 tbsp sambal oelek (adjust for spice)
  • 400ml coconut milk
  • 3 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced

Instructions

  1. Boil water and cook the ramen noodles according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, cook the chicken thighs in oil until golden brown (5-7 minutes per side). Remove from heat, let rest, and slice.
  3. In the same skillet, combine coconut milk, soy sauce, sambal oelek, and minced garlic. Simmer for 3-5 minutes.
  4. Toss the cooked noodles in the sauce until fully coated.
  5. Soft-boil eggs by cooking them in boiling water for exactly six minutes; then plunge into ice water to stop cooking.
  6. Serve the creamy buldak ramen topped with sliced chicken and half an egg per bowl. Add optional toppings like green onions or sesame seeds.
