- 1 cup granulated sugar
- 1 cup light corn syrup
- 1/2 cup cold water (divided)
- 3 tablespoons unflavored gelatin
- 1 teaspoon pure vanilla extract
- 1 cup powdered sugar (for dusting)
Instructions
- Grease an 8×8 inch baking dish with nonstick spray and dust generously with powdered sugar.
- In a medium bowl, combine 1/4 cup of cold water with the unflavored gelatin and let it bloom for 5-10 minutes.
- In a saucepan over medium heat, mix granulated sugar, corn syrup, and remaining 1/4 cup of water. Stir until dissolved, then bring to a rolling boil (240°F).
- Remove from heat and pour the hot sugar mixture into the bloomed gelatin while whisking until fully dissolved. Add vanilla extract and whisk until fluffy.
- Transfer the mixture to a stand mixer and whip on high speed for about 10 minutes until it triples in volume.
- Pour into the prepared pan, spread evenly, dust with more powdered sugar, and let set at room temperature for at least four hours or overnight. Cut into squares.
