Instructions
- Preheat oven to 350°F (175°C). In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add flour and mix until just combined to form a soft dough.
- Roll out dough on a floured surface to about ¼ inch thick. Cut out circles with a cookie cutter and place them on a parchment-lined baking sheet. Bake for 12-15 minutes until lightly golden.
- In a saucepan over medium heat, combine sweetened condensed milk with toasted coconut flakes. Stir constantly for about 5-7 minutes until thickened and golden brown.
- Once the cookies cool, spread the coconut caramel mixture evenly over each cookie.
- Melt dark chocolate chips in a microwave-safe bowl in 30-second intervals until smooth. Drizzle melted chocolate over each cookie with a fork or piping bag.
