- 2 lbs beef chuck roast
- 1 cup pearl barley

- 6 cups low-sodium beef broth

- 1–2 bay leaves
Instructions
- Chop the vegetables and mince the garlic.
- In a skillet over medium heat, sear the beef chuck roast until browned on all sides.
- Transfer the browned beef to the slow cooker along with chopped vegetables, pearl barley, garlic, thyme, bay leaves, and beef broth. Stir gently to combine.
- Cover and cook on low for 8 hours or high for 4 hours.
- Once cooked, remove bay leaves and shred any large pieces of beef before serving.
