  • 1 cup pearl barley
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 6 cups low-sodium beef broth
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 12 bay leaves

Instructions

  1. Chop the vegetables and mince the garlic.
  2. In a skillet over medium heat, sear the beef chuck roast until browned on all sides.
  3. Transfer the browned beef to the slow cooker along with chopped vegetables, pearl barley, garlic, thyme, bay leaves, and beef broth. Stir gently to combine.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. Once cooked, remove bay leaves and shred any large pieces of beef before serving.
